Made from 100% Gamay, parcels are selected for balance and complexity. Fermentation occurs in stainless steel or traditional ovoid tanks, with gentle maceration to extract delicate colour and flavour. A period of ageing on fine lees helps soften tannins and enhance texture while preserving freshness.
